Among this is the food cost percentage, which can be measured easily through the use of adding up or getting the total sum of all the food percentages for the entire week and then comparing the figure to the food sales. This IS used to protect you from having too much stock into your inventory. It is also advised that you perform a stock-take on a regular basis so that you can get the accurate percentage of the food costs. The problem here is that not a lot of managers give time into this kind of activity because it takes too much time. Other kitchen management hotel KPI includes the total food costs, the kitchen labor percentage, the kitchen labor hours, the stock value, the kitchen linen costs and the best or worst selling items. The important thing that you should always keep in mind is that whenever you utilize hotel KPI, you should ensure that the information that you will get will be used by the company.
